Baked Spicy Cabbage With Kidney Beans & Potato Mousse

Ingredients
INGREDIENTS TO COOK POTATO:
- - 2 large potatoes - I also love this recipe with sweet potatoes - choose what you like
- - 1 tbsp himalayan salt
- - 1 tsp virgin coconut oil
SPICY CABBAGE INGREDIENTS:
- - 400 g cooked kidney beans
- - 600 g mixed cabbage shredded (white, green & red - or use just one, I enjoy the variety of flavour and nutrients)
- - 1 tbsp extra virgin olive oil
- - 5 tbsp soy sauce - I use tamari kind which is little stronger, gluten free and vegan
- - 1.5 tsp grated ginger
- - 3 big cloves of garlic crushed
- - 1 tbsp dijon mustard
- - ¼ tsp cayenne pepper
Instructions
- Method:Preheat the oven to 200 C.While the potatoes are cooking, prepare the cabbage.Shred it in a machine or manually, I like to get it done with a big knife and it’s done very quickly Not too thin, not too thick, about 0.5-1 cm, they will vary and that is great, it will give the cabbage different texture as it bakes.In a small bowl, mix all the spices - soy sauce with mustard and olive oil first, so it will mix well, then add all the other ingredients, crushed garlic, ginger, etc...Pour the mixture over the cabbage and get it all in with your hands, crush it slightly and mix it very well. Add cooked beans and mix with a large spoon.Spread the cabbage on a baking tray, it will be a lot, but it will fit and will shrink a bit in baking.Bake it for 15 minutes for more al dente, longer if you’d like it softer, half way through, mix it up a bit, so it will bake evenly, thinner pieces will bake crispier which gives a nice texture to the whole dish.Once the potatoes are ready, save some water to make a mousse, add salt, little chilli if you’d like, 1 tsp of coconut oil - if you like exotic flavor and mix it with a hand blended or potato masher.Spread the mousse on a plate and top it with cabbage, enjoy!
