Kidney Beans & Chickpea Garam Masala Burgers With Sweet Potato Wedges, Greens & Greek Soy Yogurt Sauce

Ingredients
  

BURGER:

  • - 200 g cooked kidney beans
  • - 200 g cooked chickpea
  • - 4 tbsp ground chia seeds
  • - 2 tbsp chickpea flour
  • - 1 tbsp garam masala spice
  • - 2-3 medium cloves crushed garlic
  • - 0.5 medium red onion chopped
  • - 1 tbsp himalayan salt
  • - 0.5 tbsp cumin
  • - 1/4 tbsp of cayenne

POTATO WEDGES:

  • - 2 large sweet potatoes (around 800 g)
  • - Pinch of chilli
  • - 1 tbsp rosemary
  • - 1 tbsp himalayan salt (might need to ad more depending on how you like it )
  • - 1 tbsp virgin coconut oil

SOY YOGURT SAUCE:

  • - 1 big box of greek soy yogurt (unsweetened), the one I use is 400 ml
  • - Juice of half lemon or lime
  • - 0.5 tbsp himalayan salt
  • - 1/4 tbsp chili
  • - 1 tbsp chopped mint leaves
  • - ½ green cucumber chopped (about 200 g)
  • - 1 clove of garlic crushed

Instructions
 

  • Put the oven on 200 C if you have thermo-circulation or 225 C if you don’t. Let it reach the temperature while you are preparing the food.
    Wash the potatoes well, and keep the skins on.
    Cut them in wedge sizes about 1 cm thick (you don’t need to be too precise, some will be thicker some thinner, as long as they are more or less the same size, they will all bake through just fine:) )
    Place a sheet of baking paper on a baking tray and spread coconut oil on it. 
    Use your hands (I don't need to remind you to wash your hands ).
    With the remainder of the oil on your hands grab the cut potatoes and mix them with the oil on the paper, roll them with your hands, rub it all in
    Mix rosemary, chilli and himalayan salt in a small bowl and sprinkle it all over the potatoes, roll them around with your hands.
    Get in touch with your food
    Spread the potatoes evenly on a baking tray. 
    When the oven reaches the temperature, place the potatoes in the oven for about 15 mins first. After 15minutes, you will shake the tray or use aspatula to turn them.
    While the potatoes are baking. Prep the burgers.
    If you have soaked and cooked your own beans, awesome. If you have store bought beans, great as well, whatever works for your time and finances
    Drain the beans, rinse them and place them in a bowl.
    Add all the remaining ingredients and use a blender (I operate my hand blender like a champion :), I have fancy equipment and I rarely use it, my hand blender does most of the job!)
    Once you blended it all into a fine, thick “dough”, taste it, see if you are missing some flavors. Maybe you want them more spicy - add chili, maybe more garlic. 
    BUT - word to the wise
    With plant based dishes oftentime when you prepare aromatic foods, they get more aromatic after a few hours or even next day. 
    So, if you are eating them right away, you can add more spices, but if you eat it the next day, the flavours will get even more pronounced.
    What I also do is I make my burger“dough” a day before and I keep it overnight in the fridge. Next day I take it out after breakfast to warm up and I keep them at room temperature all nice and ready to be shaped into patties
    Ok, so, now potatoes have been in for 15 minutes, take them out, turn them and move them towards the end of the tray. 
    You should have space to put burgers on the tray on the front side.
    Form 4 patties and put it all back into the oven. After 10 minutes (turn the patties over) and see how the potatoes are doing, by now they should be soft and browning
    Give it 5-8 minutes more for the patties to get ready on the other side and potatoes will get even browner (I like them with a nice brown crisp).
    Mind you, unless you slap a lot of fat on the potatoes - which WE DO NOT WANT TO DO if you want to keep your arteries clean and healthy :), the potatoes will not be super crispy, but they will be delicious regardless
    While the potatoes are in the oven, mix all the ingredients for the sauce and prepare a nice mixed salad of your choice. With this variety, just a simple mix of greens with a dash of lemon will be perfect!
    TIP: You can make several portions and keep them in a fridge for up to a week and each day make them differently. Example below: on roasted zucchini, on lettuce, on toast, on Burger Buns!

    OPTION 2 - WITH GLUTEN
    All the ingredients will be the same - EXCEPT you will replace Chickpea flour with 0.5 cup of fine oats & you will use 3 tbsp of chia seeds (whole) and soak them for 10 mins in 6 tbsps of water.
    They will form a nice jello.
    Once they do, you will mix everything as in the first recipe.
    That’s it. And if you get oats - gluten free then they will also be without gluten.
    Oats give the burger even better flavor, because they take in the flavors of spices more, as opposed to chickpea flour.
    And instead of POTATOES you can get nice buns or toast some made from organic wholegrain flour and enjoy more traditionally looking burgers
    Once you make those burgers, you can play with dressing them up as you’d like with sprouts, pickles, avocados, tomatoes, see what you like.
