Instructions
Method:I use defrosted bananas ( best for baking! )* I freeze very ripe bananas and defrost them when I need to use them for recipes - they are awesome jello - like after defrosting!Preheat the oven to 200 C ( If you use thermo can be 180 C )Make chia egg - by mixing 1 TBsp of chia seeds with 2 TBsp of water - let it stand for about 10mins before it becomes a jelloCrush bananas with a fork first, I like it when they are a bit chunky, if you prefer them to be smoother use blenderMix all the ingredients togetherIf you used defrosted bananas, there won't be any need for extra moisture, but if you use fresh very ripe bananas - YOU MIGHT NEED TO ADD about 0.25 cup of oat or almond milk, you want the dough to be moist but NOT runny :)Taste, if you'd like more sweetness ( if you use defrosted ripe bananas - there is no need forextra sweetness :) ), if you do add few drops of liquid steviaChoose if you prefer muffins or loaf - this recipe yields 10 muffins for me or a small form loaf - if you go for muffins, you can decorate them differently and play more :)Place the muffins or the loaf in heated oven ( muffins will take about 20 mins, loaf 30-35 mins )This is a kind of recipe that could be actually eaten raw, you could just eat it as a raw dough for breaky, snack, dessert. In that case just skip baking soda - or have it BUT * disclaimer - if eaten raw with soda -toilet might be needed 😂
