Red Cabbage & Spinach Slaw With Beans, Avocado & Spicy, Nutty Dressing

Ingredients
  

  • - 1 medium red cabbage - usually 700 g
  • - 300 g cooked kidney beans (you can usechickpea beans or other beans you like)
  • - 1 bag of spinach - 200 g
  • - 1 green cucumber - 200 g
  • - 1 medium pomegranate - 200 g
  • - 1 medium avocado - 200 g

DRESSING:

  • - 1 cup of mix seeds  (pumpkin, flax seeds, sunflower seeds)
  • - 2 tsp himalayan salt
  • - 5 tbsp of apple cider vinegar - I like the unfiltered one for maximum nutrient content
  • - 1 tbsp virgin olive oil
  • - 1 tsp the cayenne pepper
  • - 2 medium tomatoes - 150 g
  • - 20 g of mixed nuts

Instructions
 

  • Chop the cabbage or use one of the automatic veggie shredders. I am old school and am very quick with my knife :) I usually chop them 0.5 cm wide, but they can be however thick or thin you want them.
    Place the pumpkin seeds in a seed or coffee grinder, grind them. In a big bowl mix Apple Cider Vinegar, olive oil, himalayan salt, cayenne.
    Place the chopped cabbage in a bowl with the dressing and use your hands to squeeze the cabbage so it will soften and the dressing will get into it. Mix it all up.
    After that add the ground pumpkin seeds and mix it all up again. Let it sit for a few minutes while you prep other veg.
    Leave avocado to put on top of the salad.
    Chop veg and mix it all with the cabbage. Once in a serving bowl, dress the salad with chopped nuts & avocado pieces.
    And there you have it, super fresh and invigorating Salad which can be a main course or a great side dish!
